Fried Green Tomatoes with Crab and Chipotle Mayo

Makes approximately 4 tomato slices.


1 green tomato, sliced 1/8 inch thick
Olive Oil
2 oz. blue crab meat
Mixed greens


Dredge tomato slices in flour, then buttermilk and coat with Panko bread crumbs
Fry in enough olive oil to barely cover the tomato.
Fry at 350 degrees or over medium high heat for 2-3 minutes. Do not flip.
Layer on a bed of mixed greens
Add blue crab meat to top of tomatoes
Drizzle chipotle mayo on top
Garnish with heirloom tomatoes if desired

Chipotle mayo:

1 cup Mayo
1 oz. Chipotle peppers
1 tsp. lemon juice
Blend until smooth
