Recipe by Chef Anthony Cucci of the Mar Vista Restaurant
Ingredients:
2 oz Olive oil
6 cups diced tomato in puree
2 oz tomato paste
2 cups leeks sliced
2 cups fresh fennel sliced
2 cups yellow onions sliced
2 cups celery match stick style
1 tbsp garlic
pinch saffron
2 cups fish stock
1 tsp pepper
1/4 cup Sambuca
Fresh clams, crab legs, lobster tail, mussels, fish filet, or any seafood you like and as much as you like
Pasta or rice
Method:
Heat sauce pan and olive oil. Sauté leeks, fresh fennel, onion, celery and garlic. Add tomatoes, tomato paste, fish stock, saffron, pepper and Sambuca. Simmer for 20-30 minutes. Add assorted seafood and simmer for an additional 10-15 minutes. Serve over your favorite rice or pasta.
