Recipe by Chef Will Manson of the BeachHouse Restaurant
Ingredients:
Swordfish Steaks 2ea 8oz
Jamaican Jerk Seasoning 2 oz
olive oil 1 oz
Method:
Rub Seasoning on one side of fish.
Lay seasoning side down into hot oil to sear spices to fish.
Turn swordfish and finish. Note: Lean Fish like Tuna and Swordfish should be under cooked slightly to retain tenderness and moisture.
Top off with a fruit glaze and tropical fruit salsa.
Fruit Salsa
Ingredients:
Mango 1 ea
Cantaloupe 1/2 ea
Pineapple 1/2 ea
Kiwi 1 ea
Red pepper 1 ea
Red onion 1/2 ea
Honey 1/4 cup
Lime juice 1/4 cup
Method:
Fine dice all ingredients. Mix together. Serve chilled.
