Recipe from the Sandbar Restaurant
Ingredients:
8 oz sushi grade Tuna
2 oz lemon slaw
2 oz salsa
2 oz guacamole
1 oz sour cream
2 soft flour tortilla
1 oz Jamaica jerk seasoning
1 oz olive oil
4 oz shredded cabbage
1 oz lemon juice
6 oz Sandbar rice
Preparations
Tuna Prep:
Heat olive oil in pan. Coat 2 sides of Tuna with Jamaica jerk spice and place in hot pan. Sear for 1 minute each side. Slice into strips.
Lemon Slaw Prep:
Toss shredded cabbage, sour cream, and lemon juice.
Finish:
Fold soft tortilla shell and layer Tuna, lemon slaw, salsa, and guacamole. Serve with side of rice.
