Blackened Grouper with Strawberry Salsa

Blackened Grouper

½ cup olive oil
2 oz blackened seasoning
1 lb fresh grouper (or other similar fish)

Preheat skillet until hot. Add olive oil. Press 8 oz grouper into blackened seasoning and place in hot pan. Cook for 4-5 minutes (depending on thickness of fish) turn fish… cook for 5 more minutes until done.

Strawberry Salsa

3 oz diced shallots
1 pint strawberries
¼ cup chopped mint
2 oz diced red onion
2 oz passion fruit vinaigrette

Combine all ingredients in mixing bowl. Chill in fridge for 1 hour. Place over blackened fish.
