Recipe by Chef Will Manson of the BeachHouse Restaurant, featured on ABC Channel 7 Taste of Sunrise on 6/16/10.
Ingredients:
Lobster Meat (warm water) 6 oz
Olive oil 1 oz
Garlic chopped 1 tbsp.
Scallions chopped 1 tbsp.
Portabella Mushroom 2 oz
Tomatoes diced 2 oz
White wine 1 oz
Butter whole 3 oz
Penne pasta 6 oz cooked
Method:
Heat oil in a sauté pan.
Quickly sauté lobster pieces.
Add garlic, scallions, mushrooms and toss.
Add white wine, tomato and reduce.
Swirl in butter to a creamy sauce and pour over penne pasta.
