Recipe by Chef Will Manson of the BeachHouse Restaurant, featured on ABC Channel 7 Taste of Sunrise on 7/27/10.
Ingredients:
Swordfish 6 oz 6 ea
Olive oil 1 oz
Brown Butter Sauce:
Butter 1/2 cup
Balsamic Vinegar 3 tbsp
Honey 1 tbsp
Dijon Mustard 1 tbsp
Method:
Sauté Swordfish until center is opaque. While fish is cooking, brown butter in a separate pan, add balsamic, honey, and Dijon mustard and stir in. Remove from heat and set aside. Plate Swordfish and spoon sauce over the fish. Garnish with capers and diced tomato if desired.
