Ingredients:
8 oz Mahi-MahiFilet
2 oz Italian Bread Crumbs
4 oz parmesan cheese
3 oz lump crab meat
3 oz artichoke hearts (chopped)
½ oz lemon juice
½ oz parsley chopped
1 oz canola oil
2 oz white wine
2 oz butter
Procedure:
Preheat sauté pan on medium heat.
Blend bread crumbs and parmesan cheese in food processor and place in shallow dish. Dredge fish through bread crumb and cheese mixture.
Add canola oil to heated pan, coat pan with oil. Add fish, cook for 4-6 minutes until golden brown then flip fish. Cook for 2 minutes more then add crab meat, artichoke hearts and lemon juice to side of fish in sauté pan. Heat for 1-2 more minutes until fish is done. Remove fish and add white wine to crab artichoke mixture – stir together. Let reduce 30 seconds.
Finish by adding butter and parsley – mix in, Pour over top of fish.
