Spinach And Artichoke Dip

1 lb Spinach
2 cups artichoke hearts
1 cup chopped onions
1 tsp olive oil
1 lb cream cheese
1 cup milk
1 cup heavy cream
2 cups shredded pepper jack cheese
1 tsp granulated garlic
1 tsp cayenne pepper
1 bread bowl

Garnish

1 cup cheddar cheese
2 oz chopped tomato
1 oz green onion

Heat olive oil in a hot pot, add onion, sauté until tender. Add milk and cream. Bring to simmer, add cream cheese and pepper jack cheese. Melt down, add spinach and artichokes. Season with garlic and cayenne pepper to taste. Cut out top of bread bowl, ladle in spinach dip. Sprinkle cheddar cheese on top and place in 350 degree oven until cheddar cheese melts. Place on plate, garnish with tomato and green onion. Serve with extra pieces of bread to place around dish for dipping. Yields 1 bread bowl. Serves approximately 4 people.
