Recipe by George Quattromani from the Mar Vista Dockside Restaurant & Pub
1 cup coconut milk
2 tsp Coco Lopez
1/2 tsp fresh grated ginger
1 tsp Caribbean spices
2 oz pineapple rum
4 sprigs chopped cilantro
Salt and pepper
Mix all ingredients together. Place sea bass in baking dish. Pour mixture over sea bass and bake in 375 degree oven until done, approximately 15-20 minutes.
