Chicken Salad

BeacHhouse Chicken Salad….. The perfect summer time meal…refreshing chicken salad, fresh fruit and don’t forget the Pina Colada!

BeacHhouse Chicken Salad prepared by Chef Will Manson

Ingredients:

1 lb Diced chicken breast chilled
2 sprigs chopped scallions
3 celery sticks diced small
2 tbls walnut pieces
1 ½ cup mayonnaise
1 tbls dried tarragon
1 tbls chopped fresh parsley
1 tsp kosher salt

Method:
Prepare vegetables as specified.
Add to chicken with spices and walnuts.
Add mayonnaise and fold together gently so you don’t break up the chicken.
Chill for a few hours.
Serve with crackers and seasonal fruit.
