Mullet are a native fish harvested by hardworking generations of fishermen from Cortez, one of the oldest continual fishing villages in Florida. Ed Chiles states, "We need to appreciate our native, heritage, grey striped mullet the way those in Asia and Europe do. We need to realize and capture the value here in order to increase the benefit to our local economy. That means eating the delicious super healthy filets - mullet has one of the highest Omega 3 levels of any seafood and it is excellent table fare."
