Hog Thai
makes 6 individual servings
Ingredients:
1 head of Bibb lettuce washed and separated
6 oz. Wild Hog pulled
2 oz. red onion diced
6 grape tomatoes sliced
6 oz. fresh pineapple diced
3 oz. Thai peanut sauce (store brands are adequate)
1 oz. rice cake chopped fine for a little crunch
Method:
Heat pulled hog.
Place 1 oz. of hog in each piece of lettuce leaf
Add tomatoes, pineapple and onions
Drizzle peanut sauce over the lettuce and hog
Finish with chopped rice cake
Leave the leaves open for good presentation
Enjoy!
