Banh Mi Veggie Sandwich
Ingredients:
1 Ciabatta bun
2 oz. grilled purple onion
2 oz. grilled Portobello
2 oz. goat cheese
2 slices of pickled pears
1 oz. of arugula
1 oz. roasted red pepper
1 oz. basil pesto
Slice each of the vegetables into pieces big enough to grill.
Season with salt and pepper.
Grill the vegetables until desired tenderness.
Grill the ciabatta bread.
Spread with pesto and goat cheese.
Top with the vegetables and arugula.
Serve with sweet pickles or fries.
