A great idea for holiday leftovers.
Ingredients:
1 ea sweet potato
1 ea jalapeno
1 ea corn ear
1/2 ea lime
1/2 ea avocado
2 oz cotija cheese
1/2 oz cilantro
Method:
Roast the sweet potato in the oven at 350 until tender. Dice jalapeno & remove kernels from corn & saute until nice color and tenderness is achieved. Place corn & jalapeno on sweet potatoes, add diced avocado, and squeeze juice from 1/2 lime. Season to taste with salt & pepper, & garnish with Cotija cheese & cilantro.
